What type of statistical analysis is used when analyzing responses to survey questions. Is there a reference/manual that gives this kind of information?

There are many books on the subject and ways of gathering and analyzing this type of data. To get started see a book on 'statistics for the social sciences' or 'surveys in social research', etc.
