How do you calculate statistics i need to know for a school project?

If you could help me with this i would greatly appricaite it. I have to find out how they calculate smoking statistics.

Do a search for "smoking statistics" . The results you will discover have been obtained by some kind of sampling process.
I need to know if a non-smoking policy in nightclubs would be successful or not?
